Maragogipe is one of the largest-bean coffee cultivars. At Finca El Paraíso, this lot benefits from nutrient-rich conditions that support full flavor development.

The protocol includes:

• Inoculation and cultivation of koji on dried coffee pulp and husk.
• Incubation for 4 days at 35 °C.
• Transfer of the active koji culture onto whole cherries for an additional 4 days under aerobic conditions.
• A wet-fermentation step following the Amazake method.
• Controlled drying in a dehumidifier to stabilize moisture levels.
