In collaboration with Vadim Key, Wave Coffee Roasters is proud to introduce the first espresso in the Key-Coffee lineup — a coffee jointly selected to set the standard for this new collection.
Ijen Highlands comes from Kevenka, a family producer group founded by brothers Kevin and Kenny Soewondo, who began with a café in Surabaya before moving upstream into roasting and, eventually, green coffee processing around Mt. Ijen — an active volcano famous for its turquoise, sulfur-fired crater lake. The cherry is sourced from five villages (Cucuk, Aldi, Sutrisno, Sunoto, and Lis) through a network of up to 500 farmers and collectors, whose families are largely of Madurese descent and often rotate coffee with tobacco farming through the year.
At their Botolinggo processing center — a former rice-drying facility repurposed at the foot of Ijen — Kevenka combines traditional care with modern precision. A cherry color sorter ensures uniform ripeness without burdening farmers to hand-sort, addressing a long-standing challenge in Indonesia's wet-hulled tradition, where high local demand rarely rewarded ripeness selection. For the natural process, cherries are sun-dried for 11–13 days and, when weather demands, finished in a new Pinhalese mechanical drier kept below 40°C. Post-drying, the coffee passes through pneumatic and gravity-table sorting plus screen grading at Kevenka's own micro dry mill before export.
The result is a natural-process cup built for consistency and clarity — a fitting foundation for the first espresso in the Key-Coffee series.
